Happy Tuesday!

It was a happy day when a friend recently called to get a recipe that I haven’t made in years…I was happy to be forced into remembering this great recipe!  I had made it for my son’s prom/dinner group (about a decade ago!)…and my friend remembered her son just raving about it.  It is super easy, but delicious.  We typically have mashed potatoes at our house, because my hubby is the mashed potato KING…that’s the only reason I haven’t made this baked potato topping in quite a few years.

It’s easy to remember:  1 pound butter; 1 pound sour cream; 1 pound bacon(cooked and crumbled); 1 bunch green onions.  That’s it!  Soften the butter and whip everything together. YUM!

You might also notice my baked potatoes wrapped in gold foil instead of tin foil.  I love the look of the gold…but I sure had a hard time finding it!  If you know a Sysco sales rep, check with him/her – that’s where I got mine, but again….that was about a decade ago (there’s 200 sheets in a box)! :o)
